Week #12 of P90X is just about in the books!
This week I followed this workout routine, but of course added Insanity workouts in place of the P90X cardio ones.
It's hard to believe that in about one week I will have completed the entire P90X program! I have to admit I'm pretty proud of myself. Sticking to this program has not been easy but I did it (just about) & I'm pretty proud of what I've accomplished!
What I'm not overly impressed with is these pictures. I woke up feeling bloated & I feel like it is apparent in these photos. All I know is that I've eaten fairly clean this week so it definitely is not from pigging out & eating junk. Probably hormones. Yep. I can always blame it on that. Ha!
One thing I've really been working on this week is drinking enough water. I feel like I've done a really good job this week, however, I've been adding a lot of this to my water.
My favorites are this Fruit Punch flavor as well as the Cherry Limeade flavor. Yum! But I don't know what's worse. Not drinking enough water or using these flavor packets that I'm sure are filled with lots of artificial ingredients. I've tried just adding lemons or limes to my water, but I just don't like the taste. And plain old water is just boring to me. These flavor packets are delicious & really help me drink more water throughout the day. What are your thoughts regarding water & flavor packets? Yay or Nay?
I've also found some great new recipes that I cannot wait to make this coming week. I came across a new blog, The No Sugar Sweet Life, and she has a great recipe list! Here are a couple delicious looking recipes that I'm going to make!
Greek Yogurt Strawberry Banana Bread
Ingredients:
- 1.5 cups whole wheat pastry flour + 3Tbsp
- 1.5 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 cup brown sugar (or 1/4 cup Xagave)
- 3 large ripe bananas
- 2 eggs
- 6 oz. Chobani Strawberry Banana Greek yogurt
- 1 cup diced fresh strawberries
Directions:
- Preheat oven to 375 degrees. Start by combining flour, baking powder, and salt in a large mixing bowl.
- In a separate bowl, mash bananas with a fork until they are gooey and liquid-like.
- Add eggs and sugar… mix thoroughly.
- Add Greek yogurt
- Whisk until everything is well combined and there are no lumps.
- Pour the wet ingredients into the dry ingredients, and mix until just combined. At this point, fold in the fresh strawberries!
- Pour batter into a greased loaf pan and distribute evenly.
- Put into the oven and bake for one hour, or until the top is golden brown and a toothpick comes out clean.
- Transfer to a cooling rack and (try to) let the bread cool for at least ten minutes before slicing.

Mango Salsa Chicken
Ingredients:
- 4 skinless boneless chicken breasts
- 2 ears of sweet kernel corn
- Seeds of Change brand Quinoa and Brown Rice
- Kraft Fresh Take- Southwest Three Cheese (cheese & breadcrumbs)
- Mango Pico de Gallo
- Regular Salsa
- Jalepeno Cornbread squares
Directions:
- Bake Chicken per the Fresh Take instructions - basically rinse with water, cover with breadcrumbs/cheese, bake for 30 minutes at 375 degrees.
- Cook quinoa/rice per the instructions - this particular one cooks in the microwave for 90 seconds. Then, stir in 3 Tbsp of Mango pico de gallo.
- Boil ears of corn for 12 minutes.
- Plate the meal by putting 3/4 cup of the mango quinoa/rice on a plate. Flatten it a bit to make a "bed" for the chicken. Top with a chicken breast. Pour 2 Tbsp of regular salsa over the chicken. Serve with corn on the cob and 12 - 15 jalepeno cornbread squares.
- Enjoy!

And there you have it, another week done & that much closer to our Punta Cana trip!
Which reminds me, Marc & I are going shopping on Monday for some new clothes/swimwear for our trip. I cannot wait! I'll be sure to show you our purchases.

ReplyDeleteAbout the flavor packets - you would probably be better off just adding natural fruit juice to your water. Those packets are made with sugar or, even worse, chemical sweeteners which can cause bloating. You don't want to negate your hard work with some artificially flavored water. :)
