Today's recipe is Sizzling Steak Fajitas
Ingredients
3/4 pound lean flank steak
2 teaspoons ground cumin
2 teaspoons chili powder
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1/8 teaspoon ground red pepper
4 (8-inch) flour tortillas
1 teaspoon vegetable oil
2 cups sliced onion *omitted as we are not huge lovers of onions*
1/3 cup green bell pepper strips
1/3 cup red bell pepper strips
1/3 cup yellow bell pepper strips *I used a bag of frozen green, red & yellow peppers*
1 tablespoon lime juice *used lemon juice as I was out of lime juice*
1/4 cup nonfat sour cream *also omitted because we don't like sour cream*
Commercial green salsa (optional)
Cilantro sprigs (optional)
* Trim the fat from steak. Slice steak diagonally across grain into thin strips.
* Combine steak & next 6 ingredients (steak through ground red pepper) in a zip lock bag, seal bag, & shake well to coat.
* Heat tortillas according to package directions.
* Heat 1 tsp oil in a large nonstick skillet over medium-high heat.
* Add steak, onions, and bell peppers; saute 6 minutes or until steak is done.
* Remove from heat; stir in lime juice.
* Divide mixture evenly among warm tortillas and roll up. Serve with sour cream.
* Garnish with green salsa & cilantro sprigs, if desired.
The Final Verdict: Awesome! It was super easy to make & tasted delicious! Marc said it was 'awesome' & the girls said 'this tastes good'...not too bad coming from my picky eaters! It had a wonderful flavor & wasn't too spicy like some fajitas I've had in the past. And I didn't even notice a difference by using lemon juice instead of lime juice. I served it with Mexican rice & it turned out to be a nice side dish. This recipe will definitely be on our 'make again' list!











Oh, I will have to try this version. I make the same thing but instead I put the flank steak in the crock pot in the morning and when I get home from work it's all tender. In our house we LOVE sour cream!!
