Rachael is doing well. Her blood pressure went up a little so the doctor has put her on medication three times a day. Hopefully this will help stabilize her blood pressure a little better. And she was so happy to report that she was able to pump some colostrum for her little guy. And Greyson continues to do awesome! His breathing remains about the same & the doctors say he will remain on CPAP for a few more days. Overall, it sounds like they are both doing great! Praise God!
Brian sent us this video the other day. I am in awe as I listen to Greyson cry. His cry sounds just like a newborn cry, not of a baby who is only 31 weeks gestation. Amazing!
So this week I received my new Taste of Home magazine. I came across a yummy looking recipe that I just had to try.
This week's recipe is Sweet & Tangy Pulled Pork
Ingredients
1 boneless pork shoulder butt roast (3 to 4 pounds)
1 jar (18 ounces) apricot preserves
1 large onion, chopped
2 tablespoons reduced-sodium soy sauce
2 tablespoons Dijon mustard
Hamburger buns, split, optional
* Cut pork roast in half; place in a 4- or 5-qt. slow cooker.
* Combine the preserves, onion, soy sauce and mustard; pour over roast.
* Cover and cook on low for 8-10 hours or until meat is tender. * I cooked mine on high for 4-5 hours.*
* Remove meat; cool slightly. Skim fat from cooking juices.
* Shred pork with two forks and return to slow cooker; heat through.
Final Verdict: Awesome! A perfect meal on a nice & sunny Summer evening. And it was super easy to make. Just throw it in the crock pot & forget about it until near dinner time. My kind of meal! It had just the right flavor, not to sweet nor to tangy. Marc really liked it, although, he had to have the leftovers late that night as he didn't get home from his business trip until after 8:00 pm. And he automatically poured BBQ sauce over it. Ha! I told him the recipe didn't even call for BBQ sauce & he should have eaten it as is, and he just responded with 'well it tastes good with BBQ sauce on it too.' He is such a goof. I'm sure he would have loved it sans BBQ sauce too. I will definitely be making this meal again for the family.
