Foodie Friday

It's Friday!!  Can I get an 'Amen' & a 'Hallelujah'??!!  I'm so happy that the weekend is finally here!  Marc came home last night from his business trip & the girls & I couldn't have been happier to see him!  And he even came bringing gifts!  Flowers for his one true love!  That would be ME if you were wondering! :)  Aren't they beautiful??!!


And in return for the gorgeous flowers I made him a delicious, home made dinner. 

On the menu was Turkey Piccata from Southern Living.

Ingredients:
  • 1 pound boneless turkey breast cutlets
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 3 tablespoons butter, divided
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 1/3 cup fresh lemon juice
  • 1 tablespoon drained capers
  • 6 lemon slices, halved
  • 1 tablespoon chopped fresh flat-leaf parsley
* Place turkey between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4-inch thickness, using a rolling pin or the flat side of a meat mallet.  I did not do this part as my turkey was already thin enough.

* Combine flour, salt and pepper in a shallow dish & drudge turkey cutlets in flour mixture.


* Melt 1 TBSP butter in 1 TBSP olive oil in a large nonstick skillet over medium-high heat.

* Add 1/2 of turkey, and cook 2-3 minutes on each side or until golden brown.


* Remove turkey from skillet, and place on a wire wrack in a jelly-roll pan in a 200 degree oven to keep warm. I have NO idea what a jelly-roll pan is, so I improvised & just put a baking sheet under my wire wrack.  It worked just fine.


* Repeat with remaining turkey, 1 TBSP butter, and 1 TBSP oil as needed.

* Stir wine and next 3 ingredients into skillet, and cook over medium-high heat for 2 minutes or until sauce is slightly thickened.

* Remove from the heat & stir in remaining 1 TBSP butter.

* Place turkey on a serving platter, pour sauce over turkey & sprinkle evenly with parsley.


As you can see, there were no lemons or parsley.  For some reason I thought they were both intended to be used as garnish, & I totally forgot to put them on.  Oops.

I served our Turkey Piccata with mashed potatoes & mixed vegetables.  I thought it was delicious!  The recipe was super easy to follow & only took 15-20 minutes to make.  I was wishing there was more sauce to go over the turkey, but I think had I added the lemon (like instructed to), it would have made more sauce.  Marc really liked it, too, but did say that it had a pretty strong lemon taste.  If you are not a huge lemon fan, you may want to play with the recipe a bit to lesson the lemon flavor.  Overall, we both really liked it & I definitely plan on making this recipe again!
