Foodie Friday

Do you ever feel like you make the same dinners over & over again?  I know I sure do!  I feel like I use the same 5-6 recipes every week.  And quite honestly, I am getting tired of it.  Tired of the same ole' meals week after week.  So I've decided that each week I'm going to try out one new recipe.   It's time I change it up a bit & start adding some new meals into our repertoire.

This week's recipe is Maple Salmon from here.

Here are the ingredients that were needed:

* 1/4 cup maple syrup
* 2 Tablespoons soy sauce
* 1 clove garlic, minced
* 1/4 teaspoon garlic salt
* 1/8 teaspoon ground black pepper
* 1 pound salmon (I think my salmon was only 1/2 or 3/4 pound)

1. In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt & pepper.

2. Place the salmon in a shallow baking dish & coat with the maple syrup mixture.

3. Cover the dish & marinate salmon in the refrigerator for at least 30 minutes, turning once.

4. Bake, uncovered, at 400 degrees F (200 degrees C) for 20 minutes or until salmon is easily flaked with a fork.

The Verdict: Absolutely delicious!  It did not have a 'fishy' taste & had just the right amount of sweetness to it.  Even the girls liked it!  According to the girls, the 'meat' (we DO NOT call it fish because then they won't eat it) was 'yummy' & 'tasted good'.  I served it with rice pilaf & broccoli, which complimented the fish nicely.  And the meal was super easy to prepare too, which is a MUST in my house.  I will definitely be serving this meal again!

  1. Another easy way to do salmon is to put the salmon filet down on foil (or a foil bag) and cover with brown sugar and orange juice. Give a good dose of brown sugar and enough orange juice so that it pools at the bottom of the fish. Close up the foil and cook on the BBQ. The fish will basically steam in the foil and the acid from the juice will break down the fishiness-super easy, no fish smell in the house and YUMMY! This is a hit in our house!
